Would Rhythm of Life by Richard Barnes be an appropriate piece for Large Group contest? Also, if it is, should I have a second pianist play the primo part, or just have my regular accompanist do what she can with it?

I think I would shy away from it. As a general rule, although the musical theatre genre does have some fine music, most people don't use it for contest literature. There are plenty of good quality pieces out there without having to risk a judge not appreciating your choice of literature.
